Ingredients

6 oz package orange flavored gelatin
4 cup apple cider
1 cup raisins
1 cup apples, coarsely chopped
1 cup celery, chopped
1 juice and grated rind of one lemon
1 lettuce
1 apple, unpeeled and sliced
Directions
Dissolve gelatin in 2 cups hot cider; stir in raisins. Let cool. Add
remaining 2 cups cider; chill until consistency of unbeaten egg
whites. Stir in chopped apples, celery, lemon juice and rind. Pour
into a lightly oiled 6 cup mold. Chill until set. Unmold onto lettuce
leaves and garnish with apple slices, if desired.

In his publication, Apicius tells us how the roman meals were split into hors d`oeuvres, entrees and dessert, a very modern way of dining. He also tells us how the ancient cooks used a good variety of herbs, including some familiar names for example basil, fennel and asafoetida. In the 15th century, people returning from the crusades brought back many foods and herbs from Arab countries, including coriander, parsley, and rosemary. These new culinary innovations created a surge in recipe publications, the majority of which are kept safe in private collections. Over the next few centuries, the powerful and rich houses competed with each other to offer the most extravagent meals, and as a consequence, the best cooks and their recipes increased in prestige. Notwithstanding that, it wasn`t until the 1800s that haute cuisine and cookery books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to collecting, verifying, and writing down recipes common in their social group. By the arrival of the twentieth century, cook books were in great demand, mostly as a result of more people being able to read, people having more leisure time and a general increase in wealth. The introduction of television gave us TV cookery programs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing us all to access thousands of recipes such as those found on the site you are now reading. |
