The History of Recipes
It is possible to track the history of `recipes` back into the distant past, at least as far back into recorded history as the ancient Egyptians, and possibly even further. Interesting though that maybe, generally, these old records were just primitive pictorial, hieroglyphic or cunieform instructions for preparing food.
The truth of the matter is, the most ancient recipe in existence, according to food historians is a series of stone tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `blissful`. Progressing into The time of the romans around 25BC a roman called Apicius created some scripts which described recipes enjoyed by wealthy Romans. In his scrolls, Apicius recounts how the meals of wealthy Romans were split into hors d`oeuvres, main meal and desserts, something we still use today. This early Roman chef informs us how the Roman chefs used many different spices and herbs, including a few you will know such as bay, fennel and asafoetida. During the following few centuries, the powerful and rich tried to serve the most extravagent banquests, and as a consequence, the best chefs and their recipes could command a high salary. However, it wasn`t until the 19th century that cookery and recipe collections became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted their lives to collating, testing, and writing down popular recipes of the day. By the advent of the 1900s, cookbooks are increasing in popularity as a result of more people being able to read, people having increased spare time and having more money to spend. Like it or not, the introduction of TV gave us celebrity chefs and the demand for the spin-off recipe books. Which brings us neatly up to date and the invention of the internet, allowing us all to access thousands of recipes like those on this site. |
