The History of Recipes
Written recipes as an idea can be tracked far back into the far past, in truth as far back into history as the ancient Egyptians, and quite possibly further than that. Having said that, sadly, these early recipes were just very basic pictorial instructions for food preparation.
Progressing into Roman times 25BC a roman called Apicius created a number of documents which described recipes enjoyed by wealthy roman citizens. In his publication, Apicius recounts how the meals of wealthy Romans were divided into appetizers, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius describes how the Roman chefs made use of a wide range of herbs, including a few that will be familiar to modern chefs for example thyme, rue and parsley. Later on, in the 15th century, people returning from the crusades brought us many new spices and herbs from middle-east cuisine, including basil and rosemary. These new foods and spices led to an increase in manuscripts on cooking, some of which are now in private libraries. When we get to the twentieth century, cookbooks were increasing in popularity mostly due to higher levels of literacy, people having increased free time and disposable income. |
