The History of Recipes
Written recipes as an idea can be observed way back into ancient history, in truth as far back into history as the Egyptians, and possibly even further than that. Having said that, these, ancient cookbooks were just very basic hieroglyphic instructions for food preparation.
The truth of the matter is, the most ancient recipe found, according to historians is a series of clay tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `blissful`. As we move into Roman times 25BC a roman called Apicius created a few documents showing how to cook the recipes enjoyed by the Romans. In his publication, he tells us how the roman meals were split into hors d`oeuvre, main meal and afters, something we still use today. He also recounts how the Romans used many different aromatic flavours, including a few that are still present in modern kitchens for example basil, mint and parsley. Later, in the fifteenth century, people returning from the crusades brought us a variety of foods, spices and herbs from the Middle-East, such as coriander, parsley, and rosemary. The introduction of these new herbs and spices prompted an explosion in manuscripts on cooking, most of which still exist in academic collections. By the advent of the 20th century, cookbooks were greatly in demand due to increased literacy, more free time and having more money. The revolution that is television gave us TV chefs and the spin-off recipe books. And that pretty much brings us to the present day and the internet revolution, permitting everybody to access thousands of recipes like those on sites such as the one you are reading now. |
