The History of Recipes
It is possible to follow the history of `recipes` way back into the distant past, at least as far back into recorded history as the early Egyptians, and potentially, even further back. However, mostly, these old records were just basic pictorial, hieroglyphic or cunieform instructions for meal preparation.
Interestingly, the oldest recipe in existence, according to experts in ancient history is a collection of clay tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `exhilarated, wonderful and blissful`. During Roman times around 25BC a roman called Apicius wrote a number of documents describing recipes cooked by his fellow Romans. In his works, Apicius recounts how the meals were separated into appetizers, entrees and dessert, something we still use today. Additionally, he recounts how the Roman cooks made use of a good variety of aromatic flavours, including many that are still in use today for example thyme, rue and asafoetida. In the fifteenth century, people returning from the crusades brought back many foods and spices from Arab cooking, including spices such as coriander, parsley, and basil. These new spices and herbs led to an outbreak in recipe manuscripts, most of which are kept safe in private collections. During the succeeding few hundred years, the powerful and rich houses competed with each other to lay on the most extravagent banquests, and as a consequence, chefs and their recipes could command a high salary. Even so, it was during the 1800s that fine cookery and recipe books reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated years of their lives to collecting, trying out, and recording recipes of the day. By the arrival of the 1900s, cook books were in high demand, as a result of more people being able to read, more spare time and a general increase in wealth. Like it or not, the introduction of television gave us cooking programs and the demand for the spin-off recipe books. Which brings us neatly to the present day and the internet revolution, permitting everyone to search through thousands of recipes such as those found on our site. |
