The History of Recipes
Historians have tracked the existence of recipes far back into distant history, in truth as far back into recorded history as early Egypt, and quite possibly further than that. Interesting though that is, generally, these old records were just simple hieroglyphic or cunieform instructions for preparing food.
Fascinatingly, the most ancient recipe discovered so far, according to Professor Solomon Katz, is a series of ancient tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `exhilarated, wonderful and blissful`. Progressing into The time of the romans 25BC a roman called Apicius wrote a collection of documents which described recipes prepared by his fellow Romans. In his scrolls, he tells us how the meals of wealthy Romans were split into hors d`oeuvre, main course and dessert, something we still use today. Aspicius describes how the early Romans made use of a wide range of aromatic flavours, including some familiar names such as bay, rue and parsley. As our culinary historical trip moves to more modern times we find a couple of interesting cookery books which appeared in the fourteenth century ; a recipe book called `Forme of Cury`, and another named `Curye on Inglish`. Despite their titles, these are not about the curry that is familiar to us all today, but rather accounts of the types of meals eaten by the rich and wealthy people of that period. In the 15th century, people returning from the crusades brought back many new foods and herbs from Arab cuisine, including rosemary and coriander. The introduction of these new culinary ideas prompted an increase in manuscripts on food, most of which still exist in private cookery archives. By the arrival of the twentieth century, cookbooks are increasing in popularity mostly as a result of higher levels of literacy, more leisure time and being a little richer. The introduction of television gave us celebrity chefs and the demand for the accompanying recipe books. And that brings us to the present day and the invention of computers and the internet, permitting everybody to search through massive numbers of recipes just like those on sites such as the one you are reading now. |
