The History of Recipes
It is actually possible to track the history of recipes way back into the far past, at least as far back into recorded history as the Egyptians, and potentially, even further back. Having said that, mostly, these early cookbooks were just basic hieroglyphic or cunieform recipes for preparing food.
Fascinatingly, the oldest recipe found, according to academics is a series of clay tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful. Progressing into The time of the roman empire around 25BC a man called Apicius compiled a collection of documents describing recipes enjoyed by wealthy roman citizens. In his scrolls, Apicius recounts how the meals were separated into hors d`oeuvres, main course and desserts, a style of dining still practiced today. Aspicius also informs us how the chefs of Roman times were skilled in the use of a wide range of aromatic flavors, including a few that will be familiar to modern chefs such as thyme, mint and asafoetida. Over the following few centuries, the powerful families of Europe competed with each other to serve up the best banquets, and as a result chefs and their recipes were at a premium. Notwithstanding that, it wasn`t until the nineteenth century that cookery and recipe collections reached a high level of popularity. Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, spent years to assembling, trying out, and publishing popular recipes of the day. The introduction of television brought us cooking programs and the spin-off recipe books. Which pretty much brings us to the present day and the invention of the internet, allowing everyone to access thousands of recipes just like those on sites such as this. |
