The History of Recipes

Transcribed cooking instructions as an idea can be observed far back into the distant past, at least as far into history as the Egypt of the Pharoahs, and possibly even further than that. In practice though, in the main part, these ancient recipes were just basic pictorial instructions for preparing meals.

Fascinatingly, the oldest recipe in existence, according to food historians are some stone tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful and exhilarated.

Progressing into The time of the roman empire around 25BC a roman called Apicius created a few documents detailing recipes cooked by wealthy roman citizens. In his publication, Apicius tells us how the roman meals were separated into hors d`oeuvre, entrees and afters, something we still use today. Additionally, he describes how the Roman cooks were skilled in the use of many spices, including some that we all recognise for example thyme, fennel and parsley.

Moving our culinary historical trip onwards, we find two recipe books published in the 14th Century ; a book titled `Forme of Cury`, and another titled `Curye on Inglish`. The titles are a little misleading though, these are nothing to do with the spicy food that is familiar to us all today, but rather descriptions of the types of food enjoyed by the rich and wealthy people of that time.

In the 15th century, people returning from the crusades brought us many foods and spices from Arab cooking, such as parsley and basil. The introduction of these new tastes prompted an outbreak in manuscripts on cookery, most of which still exist in academic collections.

Over the following few centuries, the upper classes competed to offer the most extravagent banquests, and as a consequence, cooks and their recipe collections could command a high salary. Notwithstanding that, it wasn`t until the 1800s that cooking and recipe books became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, spent years to collating, testing, and writing down recipes of the day.

When we get to the 1900s, cookbooks were in great demand, as a result of more people being able to read, people having more free time and having more money to spend.

The arrival of TV gave us TV cookery programs and the demand for the spin-off recipe books.

Which brings us neatly to the present day and the internet revolution, permitting everyone to access massive numbers of recipes like the ones you can find on this recipe site.
