The History of Recipes
It is quite possible to follow the history of written cooking instructions far back into ancient history, in fact as far back into history as the ancient Egyptians, and quite possibly further than that. Having said that, generally, these ancient recipes were just primitive hieroglyphic instructions for preparing meals.
The truth of the matter is, the most ancient recipe found, according to food historians are a few stone tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated. As we move into Roman times around 25BC a roman called Apicius created a collection of documents showing how to cook the recipes enjoyed by wealthy Romans. In his scrolls, he recounts how the meals were split into starters, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius tells us how the chefs of Roman times were skilled in the use of a good variety of aromatic flavors, including a few that will be familiar to modern cooks like basil, rue and asafoetida. Moving on, there were a couple of books which date from the fourteenth century : a cookery book published under the title `Forme of Cury`, and another titled `Curye on Inglish`. Perhaps surprisingly, they are not about the indian curry that is served today, but rather recipes for the types of food eaten by the rich and powerful of that time. Later, in the 15th century, people returning from the crusades brought us a variety of spices and herbs from the East, including spices like basil and rosemary. These new foods and spices was responsible for a torrent in recipe books, the majority of which are now in private collections. The revolution that is television gave us TV chefs and the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing everybody to access massive numbers of recipes such as those found on sites such as the one you are reading now. |
