The History of Recipes
Recipes as an idea can be tracked way back into antiquity, in fact as far back into history as the Egyptians, and possibly even further. Having said that, in the main part, these old recipes were just basic pictorial, hieroglyphic or cunieform instructions for food preparation.
In fact, the most ancient recipe discovered, according to experts are a few stone tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful and exhilarated. Progressing into The time of the roman empire 25BC a man called Apicius compiled a few scripts which described recipes cooked by wealthy roman citizens. In his publication, he tells us how the roman meals were separated into hors d`oeuvre, entrees and dessert, a very modern way of dining. This early Roman chef informs us how the ancient chefs used a wide range of herbs and spices, including many that are still in use today for example basil, fennel and asafoetida. For the centuries that followed, the wealthy families of Wesstern Europe tried to offer the most exotic meals, and consequentially chefs and their recipe collections became highly prized. However, it wasn`t until the 1800s that formal cookery and cookery books rose to prominence. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted their lives to assembling, verifying, and recording recipes of the day. By the time we get to the 20th century, recipe publications are starting to become popular mostly as a result of better eduction, increased leisure time and disposable income. |
