The History of Recipes
Written cooking instructions as an idea can be tracked far back into antiquity, in truth as far into history as pharonic Egypt, and maybe even further. However, generally, these early recipes were just primitive pictorial instructions for meal preparation.
In an interesting twist, the most ancient recipe in existence, according to experts are some tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `blissful`. Later on, in The time of the romans 25BC a roman called Apicius wrote some documents which described recipes cooked by wealthy roman citizens. In his publication, he recounts how the meals of wealthy Romans were split into hors d`oeuvre, main meal and desserts, a very modern way of dining. This early Roman chef recounts how the ancient cooks made use of many spices, including a few that will be familiar to modern chefs like bay, mint and dill. Moving our culinary historical trip onwards, we find two interesting recipe books which were published in the 1300s - a recipe book titled `Forme of Cury`, and another called `Curye on Inglish`. Surprisingly, these are unconnected to the indian curry that we all know today, but instead descriptions of the types of food enjoyed by the rich and powerful. Later on, in the 15th century, people returning from the crusades brought back many new foods and spices from Arab countries, including spices such as coriander, basil and rosemary. These new foods and spices prompted an eruption in books on cookery, most of which are kept safe in academic collections. When we get to the 20th century, cook books are starting to become popular as a result of more people being able to read, leisure time and disposable income. |
