The History of Recipes
Written cooking instructions as a concept can be observed back into ancient history, in fact as far as the Egyptians, and maybe even further. In practice though, these, ancient recipes were just very basic hieroglyphic recipes for meal preparation.
In an interesting twist, the most ancient recipe discovered, according to experts are a few clay tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated and blissful. Moving our culinary historical trip onwards, we have two books from the 1300s ; a recipe book published under the title `Forme of Cury`, and another titled `Curye on Inglish`. Despite their titles, they have no connection with the indian food that we all know today, but rather descriptions of the types of meals cooked for the upper classes of the time. Over the next few hundred years, the rich families of the West strove to lay on the best banquets, and consequentially chefs and their recipe collections became highly prized. However, it was during the 19th century that haute cuisine and recipe books became really popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated their lives to assembling, verifying, and writing down recipes for their fellow cooks to enjoy. When we get to the 1900s, cooking publications were starting to become popular due to better eduction, leisure time and disposable income. The arrival of TV brings us celebrity TV chefs and the spin-off recipe books. Which brings us neatly to the present day and the invention of the internet, allowing us all to search through thousands of recipes just like those on our web site. |
