The History of Recipes
We are able to trace the history of written recipes back into history, at least as far back into recorded history as pharonic Egypt, and quite possibly further than that. Having said that, these, ancient cook books were just very simple hieroglyphic recipes for meal preparation.
As we move into Roman times 25BC a man called Apicius compiled a few documents describing recipes prepared by the Romans. In his publication, Apicius tells us how the roman meals were split into hors d`oeuvres, main meal and afters, a very modern way of dining. Aspicius describes how the early Romans were skilled in the use of many spices, including a few that are still present in modern kitchens like thyme, rue and asafoetida. During the next few centuries, the wealthy families of the West competed with each other to offer the most extravagent meals, and as a consequence, the best cooks and their recipe collections were highly sought after. Notwithstanding that, it wasn`t until the 19th century the formal cooking and recipe books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, spent years to collecting, testing, and recording recipes that were common in the better off homes of the day. The revolution that is television brought us TV cookery programs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, permitting everybody to access thousands of recipes like the ones you can find on this recipe site. |
