The History of Recipes
Food historians have proved the existance of recipes way back into history, at least as far back into recorded history as the Egyptians, and possibly even further. In practice though, these, early cookbooks were just very simple pictorial recipes for preparing food.
During the time of the Roman Empire a roman called Apicius compiled a collection of documents describing recipes prepared by his fellow Romans. In his publication, he tells us how the meals of wealthy Romans were split into starters, main course and dessert, a very modern way of dining. This early Roman chef describes how the cooks of Roman times made use of a wide range of aromatic flavours, including a few you will know like basil, fennel and asafoetida. In the fifteenth century, knights returning from the crusades brought back many foods, spices and herbs from Arab cooking, including spices such as basil and rosemary. The introduction of these new tastes led to a torrent in publications on food, most of which are kept safe in private collections. Like it or not, the introduction of television brings us TV cookery programs and the spin-off recipe books. Which brings us neatly up to date and the invention of computers and the internet, allowing everybody to search through massive numbers of recipes just like those on sites such as the one you are reading now. |
