The History of Recipes
We can track the history of written recipes back into distant history, in fact as far back as pharonic Egypt, and maybe further still. However, generally, these ancient cook books were just basic hieroglyphic recipes for food preparation.
In fact, the most ancient recipe discovered, according to academics are some clay tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful and blissful. Progressing into Roman times around 25BC a man called Apicius compiled a number of scripts showing how to cook the recipes cooked by his fellow Romans. In his publication, he recounts how the meals of wealthy Romans were split into hors d`oeuvres, main meal and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also tells us how the Romans used many spices, including a few that will be familiar to modern chefs such as thyme, fennel and asafoetida. For the next few years, the wealthy families of Wesstern Europe strove to offer the most extravagent meals, and consequentially the best cooks and their recipes were much in demand. Nevertheless, it wasn`t until the 19th century that fine cooking and cookery books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to collecting, testing, and publishing recipes for their fellow cooks to enjoy. By the advent of the twentieth century, recipe publications are greatly in demand mostly as a result of better eduction, people having more leisure time and having more disposable income. The introduction of the TV brought us TV chefs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, permitting everybody to access thousands of recipes like the ones you can find on this web site. |
