The History of Recipes
Written recipes as a concept can be traced way back into the distant past, certainly as far back into history as the ancient Egyptians, and quite possibly further than that. Interesting though that maybe, mostly, these early cook books were just basic hieroglyphic recipes for preparing meals.
In an interesting twist, the oldest recipe discovered, according to historians are some clay tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated. Much later, in Roman times a man called Apicius assembled a collection of scripts detailing recipes enjoyed by his fellow Romans. In his scrolls, he tells us how the meals were split into starters, main meal and afters, something that is very familiar to us today. Aspicius also informs us how the ancient cooks were skilled in the use of a wide range of aromatic flavours, including a few that will be familiar to modern cooks for example basil, mint and parsley. Over the succeeding few hundred years, the powerful families of the West competed to serve up the most exotic meals, and consequentially the best chefs and their recipe collections were greatly in demand. Even so, it was during the 19th century that cooking and recipe publications really came of age. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted much of their lives to assembling, trying out, and publishing recipes common in their social group. When we get to the twentieth century, recipe books are highly popular mostly due to better eduction, people having increased free time and having more money. |
