The History of Recipes
It is quite feasible to prove the history of recipes back into history, in truth as far into history as the early Egyptians, and possibly even further than that. In practice though, sadly, these old cook books were just simple pictorial instructions for meal preparation.
Interestingly, the most ancient recipe discovered, according to historians are some tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `exhilarated, wonderful and blissful`. During Roman times 25BC a man called Apicius compiled a few documents which described recipes cooked by wealthy roman citizens. In his publication, he tells us how the meals were divided into appetizers, main meal and afters, a style of dining still practiced today. Aspicius describes how the early Romans were skilled in the use of many spices, including some that we all recognise for example bay, fennel and asafoetida. During the succeeding few centuries, the wealthy families of the West tried to offer the most exotic banquets, and consequentially cooks and their collection of recipes were much in demand. Notwithstanding that, it was during the 19th century the formal cooking and recipe collections became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, spent years to collating, testing, and writing down the recipes of their peers. By the time we get to the twentieth century, cooking books were starting to become popular due to better eduction, people having more free time and having more money. |
