The History of Recipes
We are able to trace the history of meal recipes back into antiquity, certainly as far back into recorded history as pharonic Egypt, and quite possibly further than that. In practice though, sadly, these old records were just very basic pictorial recipes for food preparation.
Interestingly, the oldest recipe found, according to academics are a few clay tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `wonderful`. Later on, in Roman times 25BC a man called Apicius created a number of scripts detailing recipes enjoyed by wealthy roman citizens. In his scrolls, Apicius describes how the roman meals were split into hors d`oeuvre, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he describes how the cooks of his times used many aromatic flavours, including a few that will be familiar to modern cooks like thyme, fennel and dill. During the succeeding few hundred years, the rich families of the West competed to serve the most extravagent banquests, and as a result the best chefs and their recipes were at a premium. Even so, it wasn`t until the nineteenth century the formal cooking and cookery books reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to collating, trying out, and publishing recipes to help cooks of their time. Like it or not, the introduction of television brings us TV cooks and the demand for the spin-off recipe books. Which pretty much brings us up to date and the invention of computers and the internet, allowing everyone to search through thousands of recipes like the ones you can find on sites such as the one you are reading now. |
