The History of Recipes
Academics have traced the existance of recipes far back into the distant past, in fact as far into history as pharonic Egypt, and possibly even further. In practice though, mostly, these ancient cookbooks were just basic pictorial, hieroglyphic or cunieform instructions for meal preparation.
Interestingly, the most ancient recipe discovered so far, according to academics are a few stone tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `wonderful`. During Roman times around 25BC a roman called Apicius created a collection of scripts showing how to cook the recipes enjoyed by his fellow Romans. He describes how the meals were divided into hors d`oeuvres, entrees and dessert, something that is very familiar to us today. He also tells us how the cooks of his times made use of a good variety of aromatic flavours, including many that are still in use today such as thyme, mint and dill. In the fifteenth century, people returning from the crusades brought us a variety of foods and herbs from Arab cuisine, including spices such as coriander, parsley, and rosemary. The introduction of these new tastes created a surge in recipe publications, some of which are kept safe in private cookery archives. During the succeeding few hundred years, the upper classes strove to serve up the most extravagent meals, and because of this chefs and their recipes were much in demand. Notwithstanding that, it wasn`t until the 1800s that haute cuisine and recipe publications became popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated the best years of their lives to collecting, trying out, and recording popular recipes of the day. By the arrival of the 20th century, cookery books are greatly in demand mostly as a result of higher levels of literacy, more spare time and having more disposable income. Like it or not, the introduction of television gave us TV chefs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing everyone to search through massive numbers of recipes such as those found on our site. |
