The History of Recipes
Academics have found proof that recipes existed way back into ancient history, at least as far as pharonic Egypt, and maybe further still. However, these, old records were just very simple pictorial, hieroglyphic or cunieform recipes for preparing meals.
Interestingly, the oldest recipe discovered, according to food historians are some clay tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful. Later on, in Roman times 25BC a man called Apicius created a collection of scripts describing recipes enjoyed by the Romans. In his works, he recounts how the meals of wealthy Romans were split into starters, main meal and afters, a style of dining still practiced today. This early Roman chef recounts how the Roman chefs made use of a good variety of herbs and spices, including many that are still in use today like basil, rue and asafoetida. In the fifteenth century, knights returning from the crusades brought us many foods and spices from the holy lands, including coriander, parsley, and basil. The introduction of these new foods and spices was responsible for an eruption in manuscripts on food, many of which are now in private libraries. During the succeeding few centuries, the rich families of Europe competed with each other to serve the most extravagent banquests, and consequentially the best cooks and their recipes were at a premium. Nevertheless, it was during the 19th century that formal cookery and recipe collections became really popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated the best years of their lives to collecting, verifying, and recording recipes that were common in the better off homes of the day. By the arrival of the 1900s, cooking publications are in high demand, as a result of better eduction, people having more spare time and having more money to spend. Like it or not, the introduction of television brought us cooking programs and the demand for the spin-off recipe books. Which brings us neatly up to date and the invention of the internet, allowing us all to search through massive numbers of recipes such as those found on our web site. |
