The History of Recipes
We can follow the history of written recipes far back into history, certainly as far as ancient Egypt, and possibly even further than that. Interesting though that is, in the main part, these early cookbooks were just basic hieroglyphic instructions for meal preparation.
In fact, the oldest recipe discovered, according to experts in ancient history are a few ancient tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `wonderful`. Later on, in The time of the romans around 25BC a roman called Apicius wrote a few documents detailing recipes prepared by wealthy Romans. In his scrolls, he recounts how the meals were divided into starters, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef tells us how the cooks of Roman times were skilled in the use of many different herbs, including many that are still in use today such as basil, fennel and dill. Later, we find a couple of cookery books which date from the 14th Century : a book published under the title `Forme of Cury`, and another, similary entitled `Curye on Inglish`. The titles are somewhat misleading tho`, they have no connection with the indian food that is served today, but rather accounts of the types of food served to the nobility of the time. Later on in the 1400s, people returning from the crusades brought back a variety of spices and herbs from the holy land, such as parsley, basil and rosemary. These new foods and tastes led to an explosion in recipe publications, the majority of which still exist in private cookery archives. By the time we get to the 20th century, cook books were highly popular mostly due to better eduction, people having more spare time and a general increase in wealth. |
