1/4 tsp baking soda dissolved
1 in 1 t warm water.

The History of Recipes
We are able to read the history of written recipes back into antiquity, in fact as far back as the Egypt of the Pharoahs, and quite possibly further than that. Having said that, mostly, these old cook books were just basic hieroglyphic or cunieform recipes for meal preparation.
The truth of the matter is, the most ancient recipe discovered so far, according to academics are a few tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `blissful`. As we move into The time of the romans around 25BC a man called Apicius compiled a collection of scripts showing how to cook the recipes cooked by the Romans. He tells us how the roman meals were divided into appetizers, main meal and dessert, something we still use today. Additionally, he tells us how the cooks of Roman times used a wide range of aromatic flavours, including a few that will be familiar to modern chefs like basil, rue and dill. As we move on, there are some interesting books published in the fourteenth century ; a cookery book published under the title `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Don`t be fooled by the titles though, these two books are unconnected to the indian food that is familiar to us all today, but rather accounts of the types of food served to the rich people of the time. Later, in the fifteenth century, the Crusaders brought back a variety of foods and spices from Arab cuisine, including basil and coriander. The introduction of these new foods and spices prompted a surge in manuscripts on cooking, the majority of which are kept safe in academic collections. During the next few centuries, the rich and powerful families of the West tried to serve up the most exotic banquets, and consequentially cooks and their collection of recipes were at a premium. Nevertheless, it wasn`t until the 1800s that formal cookery and cookery books reached a high level of popularity. Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated the best years of their lives to collating, verifying, and writing down recipes of the day. By the advent of the 20th century, cookery books are increasing in popularity mostly due to better eduction, more spare time and having more disposable income. |
