The History of Recipes
It is quite possible to trace the history of written cooking instructions far back into the far past, certainly as far back as the early Egyptians, and possibly even further than that. However, sadly, these ancient recipes were just simple hieroglyphic recipes for food preparation.
As we move into Roman times around 25BC a roman called Apicius created a number of documents describing recipes cooked by wealthy Romans. In his publication, Apicius tells us how the meals were divided into hors d`oeuvre, entrees and desserts, something that is very familiar to us today. Aspicius informs us how the chefs of Roman times used many different spices, including a few that will be familiar to modern chefs such as basil, mint and parsley. Later, in the 15th century, people returning from the crusades brought us many foods, spices and herbs from the East, such as coriander, parsley, basil and rosemary. These new foods and spices prompted an outbreak in books on cookery, some of which are kept safe in academic collections. By the advent of the 1900s, cookbooks were in high demand, due to increased literacy, people having more free time and having more money to spend. |
