The History of Recipes
It is quite possible to trace the history of recipes way back into ancient history, certainly as far back into history as the Egypt of the Pharoahs, and quite possibly further than that. Interesting though that is, these, ancient recipes were just simple hieroglyphic instructions for food preparation.
During Roman times 25BC a man called Apicius compiled some scripts detailing recipes enjoyed by the Romans. In his works, he describes how the roman meals were separated into appetizers, main course and dessert, a very modern way of dining. Aspicius also informs us how the cooks of his times were skilled in the use of a wide range of spices, including a few that are still present in modern kitchens such as thyme, mint and parsley. During the succeeding few centuries, the rich families of Europe competed to serve up the most extravagent banquests, and as a result the best cooks and their recipe collections were highly sought after. However, it was during the nineteenth century that fine cookery and cookery books reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, spent years to assembling, testing, and recording recipes for their fellow cooks to enjoy. By the arrival of the 1900s, recipe books were highly popular as a result of increased literacy, more leisure time and being a little richer. |
