The History of Recipes
Experts have tracked the existence of recipes far back into antiquity, certainly as far back as the early Egyptians, and quite possibly further than that. In practice though, in the main part, these ancient cook books were just very simple pictorial, hieroglyphic or cunieform recipes for preparing food.
Fascinatingly, the oldest recipe found, according to food historians is a collection of stone tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful and exhilarated. As we move into The time of the roman empire 25BC a roman called Apicius wrote a number of scripts describing recipes cooked by wealthy roman citizens. In his publication, Apicius tells us how the roman meals were separated into appetizers, entrees and dessert, something that is very familiar to us today. Aspicius informs us how the cooks of Roman times used a wide range of aromatic flavours, including a few that will be familiar to modern chefs such as bay, fennel and parsley. Over the next few centuries, the powerful and rich houses competed with each other to lay on the most exotic banquets, and as a result the best chefs and their recipes were at a premium. Notwithstanding that, it was during the 1800s that fine cookery and recipe publications really came of age. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, devoted their lives to assembling, trying out, and publishing recipes for their fellow cooks to enjoy. The introduction of television gave us cooking programs and the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, allowing everybody to access thousands of recipes just like those on sites such as the one you are reading now. |
