The History of Recipes
Written cooking instructions as a concept can be tracked far back into the distant past, in truth as far back into recorded history as the Egypt of the Pharoahs, and quite possibly further than that. Interesting though that is, in the main part, these old recipes were just basic hieroglyphic or cunieform instructions for food preparation.
The truth of the matter is, the most ancient recipe discovered, according to experts are a few clay tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful. As we move on, there were two books dating from the fourteenth century : a recipe book published under the title `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Despite their titles, these are unconnected to the indian food that is popular today, but rather recipes for the types of food prepared by the chefs of the upper classes of that time. Later, in the fifteenth century, knights returning from the crusades brought back many new foods, spices and herbs from the holy land, including spices like coriander, parsley, basil and rosemary. The introduction of these new culinary ideas prompted an eruption in recipe publications, many of which still exist in private libraries. During the next few centuries, the rich and powerful families of Europe tried to offer the best banquets, and consequentially the best chefs and their collection of recipes became highly prized. However, it wasn`t until the 19th century that haute cuisine and recipe collections really came of age. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated years of their lives to collating, testing, and publishing recipes of the day. By the advent of the 20th century, cookery publications are starting to become popular due to better eduction, people having increased spare time and disposable income. The revolution that is television brings us celebrity TV chefs and the spin-off recipe books. Which brings us neatly up to date and the invention of computers and the internet, allowing everybody to search through massive numbers of recipes like those on this web site. |
