The History of Recipes
Experts have traced the existence of recipes way back into antiquity, in truth as far back as the Egyptians, and maybe further still. Having said that, in the main part, these ancient recipes were just simple hieroglyphic or cunieform instructions for preparing food.
Fascinatingly, the most ancient recipe discovered, according to academics is a series of stone tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful. As our culinary historical trip moves on a few more years there were two books from the 14th Century - a cookery book called `Forme of Cury`, and another called `Curye on Inglish`. Perhaps surprisingly, these have no connection with the curry that is served today, but rather recipes for the types of meals on the tables of the rich and wealthy people of that period. In the fifteenth century, people returning from the crusades brought us many new foods, spices and herbs from the holy land, including coriander, parsley, and rosemary. These new foods and spices caused an explosion in publications on food, the majority of which still exist in private collections. Over the following few hundred years, the rich and powerful families of Wesstern Europe tried to offer the best banquets, and consequentially the best cooks and their recipes were at a premium. Nevertheless, it wasn`t until the 19th century that formal cookery and cookery books became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collating, trying out, and writing down recipes common in their social group. By the arrival of the 20th century, cookery books were starting to become popular due to better eduction, people having more leisure time and having more disposable income. The introduction of television brings us celebrity TV chefs and the spin-off recipe books. Which brings us neatly to the present day and the internet revolution, permitting everybody to search through massive numbers of recipes like those on our site. |
