The History of Recipes
We can track the history of meal recipes way back into ancient history, in truth as far into history as the Egyptians, and maybe even further. Interesting though that maybe, sadly, these old records were just primitive hieroglyphic or cunieform instructions for preparing meals.
In fact, the most ancient recipe discovered so far, according to historians are some tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated. Progressing into The time of the roman empire 25BC a man called Apicius created a collection of scripts which described recipes enjoyed by his fellow Romans. In his works, Apicius recounts how the meals were separated into hors d`oeuvre, main meal and desserts, something that is very familiar to us today. Additionally, he describes how the early Romans made use of many herbs, including a few that are still present in modern kitchens such as thyme, fennel and dill. For the centuries that followed, the rich families of Europe tried to serve up the best banquets, and because of this chefs and their recipe collections were much in demand. Even so, it wasn`t until the 19th century that fine cooking and recipe publications really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated years of their lives to collecting, verifying, and recording the recipes that were being prepared for the better households. By the time we get to the 20th century, cooking publications are increasing in popularity due to higher levels of literacy, leisure time and having more money. The introduction of the TV brought us celebrity chefs and the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, permitting everybody to search through thousands of recipes like the ones you can find on the site you are now reading. |
