The History of Recipes

Written recipes as a concept can be observed far back into history, at least as far as the Egyptians, and possibly even further than that. Having said that, sadly, these early cook books were just primitive hieroglyphic or cunieform instructions for meal preparation.

In an interesting twist, the oldest recipe found, according to experts in ancient history is a series of clay tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful.

Much later, in Roman times a roman called Apicius wrote a number of documents describing recipes enjoyed by the Romans. In his publication, Apicius recounts how the meals of wealthy Romans were divided into appetizers, main course and afters, something that is very familiar to us today. This early Roman chef informs us how the ancient chefs were skilled in the use of a wide range of aromatic flavors, including a few that are still present in modern kitchens for example basil, fennel and dill.

Later on, in the 15th century, people returning from the crusades brought back many foods, spices and herbs from the Middle-East, such as parsley, basil and rosemary. These new foods and spices created a torrent in manuscripts on cookery, some of which still exist in private cookery archives.

Over the succeeding few hundred years, the powerful and rich houses competed with each other to serve the best banquets, and as a result cooks and their collection of recipes increased in prestige. Nevertheless, it was during the nineteenth century that cooking and recipe publications became really popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to assembling, trying out, and recording the recipes of their peers.

When we get to the twentieth century, cook books were in high demand, due to increased literacy, people having more spare time and a general increase in wealth.

The TV revolution gave us cooking programs and the spin-off recipe books.

Which brings us neatly up to date and the invention of the internet, permitting us all to access massive numbers of recipes just like those on sites such as this.
