The History of Recipes
Academics have traced the existence of recipes back into distant history, in fact as far back into history as the early Egyptians, and possibly even further. Interesting though that is, in the main part, these old records were just primitive hieroglyphic or cunieform recipes for meal preparation.
Fascinatingly, the most ancient recipe in existence, according to historians is a series of ancient tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful and blissful. Progressing into The time of the romans 25BC a man called Apicius compiled some documents showing how to cook the recipes enjoyed by the Romans. In his works, he describes how the meals of wealthy Romans were divided into appetizers, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also informs us how the cooks of his times used many different aromatic flavours, including a few that are still present in modern kitchens such as bay, mint and asafoetida. As our culinary historical trip moves to more modern times we have some books dating from the 1300s ; one book called `Forme of Cury`, and another entitled `Curye on Inglish`. The titles are somewhat misleading tho`, these two books are unconnected to the curry that is served today, but rather descriptions of the types of meals prepared for the upper classes of the period. In the 15th century, knights returning from the crusades brought us a variety of foods, spices and herbs from Arab cooking, such as rosemary and coriander. These new foods and tastes led to a torrent in publications on food, the majority of which still exist in private collections. By the arrival of the twentieth century, recipe books were greatly in demand due to more people being able to read, more free time and having more money. |
