The History of Recipes
We are able to trace the history of written recipes way back into the distant past, at least as far back as pharonic Egypt, and possibly even further. In practice though, generally, these old cookbooks were just simple pictorial instructions for preparing meals.
The truth of the matter is, the oldest recipe discovered, according to Professor Solomon Katz, is a collection of tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful and blissful. As we move into Roman times 25BC a man called Apicius assembled a collection of scripts detailing recipes enjoyed by his fellow Romans. In his scrolls, Apicius recounts how the meals were separated into starters, main course and desserts, a style of dining still practiced today. Aspicius also informs us how the chefs of Roman times used a good variety of spices, including some familiar names such as bay, fennel and asafoetida. As we move on, there are two recipe books which were published in the 1300s - a recipe book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. The titles are a little misleading though, they are not about the spicy food that is popular today, but instead descriptions of the types of food served to the rich and powerful of that period. Later, in the fifteenth century, the Crusaders brought back a variety of foods and spices from the holy lands, including spices such as coriander, parsley, and basil. These new culinary innovations was responsible for an increase in books on cooking, many of which are kept safe in private collections. By the advent of the 20th century, recipe books are highly popular as a result of better eduction, more spare time and being a little richer. The revolution that is television brought us TV cooks and the demand for the accompanying recipe books. Which pretty much brings us to the present day and the invention of the internet, allowing everybody to access thousands of recipes such as those found on this web site. |
