Ingredients
1 can 28oz tomatoes in juice
3/4 tsp italian seasoning
1 tsp salt
1/2 tsp pepper
12 oz spaghetti
10 oz frozen mixed vegetables
15 oz ricotta cheese
1/2 cup milk
3 large eggs
1/4 cup parm cheese
Directions
Heat oven to 375. Grease 13x9x2 baking dish.
Empty can of tomatoes into medium saucepan. Stir in italian
seasoning, 1/2 t salt and 1/4 t pepper. Bring to a boil, stirring
and breaking up matoes with a wooden spoon. Reduce heat and simmer 25
min, stirring occasionally or til desired thickness.
While sauce cooks bring a large pot of lightly salted wter to a boil.
Add spaghetti and cook according to package directions, adding frozen
veggies to pot for last 5 min of cooking time. Drain well.
Meanwhile mix ricotta, milk, eggs, remaining salt and pepper in a
large bowl. Add spaghetti with vegetables and mix well. Transfer to
prepared dish and smooth top.
Bake 15 min til set. Sprinkle with parm cheese; serve with the tomato
sauce.

The History of Recipes
Food historians have tracked the existance of recipes way back into the far past, in fact as far back into recorded history as the Egypt of the Pharoahs, and potentially, even further back. Much later, in Roman times a man called Apicius assembled a number of documents which described recipes enjoyed by his fellow Romans. He describes how the meals of wealthy Romans were split into starters, main course and desserts, something that is very familiar to us today. Additionally, he informs us how the ancient cooks were skilled in the use of many spices, including a few that will be familiar to modern chefs like bay, mint and asafoetida. Later on, in the 15th century, the Crusaders brought back many new foods and spices from Arab cuisine, including spices such as basil and rosemary. The introduction of these new tastes was responsible for a torrent in books on cookery, some of which are now in academic collections. When we get to the twentieth century, recipe books are increasing in popularity as a result of higher levels of literacy, more spare time and disposable income. |
