The History of Recipes

We are able to follow the history of written recipes far back into antiquity, at least as far into history as the early Egyptians, and maybe further still. Interesting though that is, in the main part, these old cook books were just very basic pictorial instructions for food preparation.

The truth of the matter is, the oldest recipe discovered so far, according to experts in ancient history are some stone tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful and blissful.

Later on, in The time of the roman empire around 25BC a roman called Apicius wrote some scripts detailing recipes cooked by his fellow Romans. In his works, he describes how the meals were separated into hors d`oeuvres, main course and dessert, something that is very familiar to us today. Additionally, he describes how the Roman chefs used a wide range of spices and herbs, including a few you will know such as basil, fennel and parsley.

As we move on, we find some recipe books from the 14th Century : a book titled `Forme of Cury`, and another named `Curye on Inglish`. The titles are somewhat misleading tho`, these books are not about the curry that appears on menues today, but rather descriptions of the types of meals prepared by the cooks of the rich and wealthy people of the period.

Later, in the fifteenth century, people returning from the crusades brought back many foods, spices and herbs from Arab cuisine, including basil and rosemary. These new foods and tastes caused a torrent in publications on food, some of which still exist in academic collections.

During the following few hundred years, the powerful and wealthy houses competed to offer the best banquets, and because of this the best cooks and their collection of recipes increased in prestige. However, it wasn`t until the nineteenth century that formal cookery and recipe publications became really popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated their lives to assembling, testing, and publishing recipes for their fellow cooks to enjoy.

By the time we get to the 1900s, cook books are in great demand, due to higher levels of literacy, people having more spare time and a general increase in wealth.
