The History of Recipes
It is quite possible to trace the history of written cooking instructions far back into distant history, in truth as far as ancient Egypt, and potentially, even further back. However, mostly, these old records were just very basic hieroglyphic or cunieform instructions for meal preparation.
As we move into Roman times around 25BC a roman called Apicius created some scripts which described recipes prepared by wealthy roman citizens. In his publication, Apicius describes how the roman meals were divided into hors d`oeuvre, main meal and desserts, a style of dining still practiced today. He also describes how the ancient cooks used a good variety of aromatic flavors, including some that we all recognise like basil, fennel and parsley. During the following few centuries, the powerful and rich tried to lay on the most exotic meals, and consequentially the best chefs and their collection of recipes became highly prized. Nevertheless, it wasn`t until the 19th century that cookery and recipe collections rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated their lives to collecting, trying out, and writing down recipes to help cooks of their time. By the advent of the 1900s, cookbooks are increasing in popularity mostly due to better eduction, people having increased spare time and disposable income. |
