Ingredients
1 spare ribs
1 sauerkraut
2 cup flour
1 each egg, beaten
1 tsp baking powder
1 cup milk
Directions
Cut spare ribs into portions and place in the bottom of a roasting
pan. Add the sauerkraut, cover the pan and bake at 350-F for 1-1/2
hours. Make dumplings by combining the flour, baking powder, milk and
egg. Drop by spoonfuls on the sauerkraut. Cover pan tightly and
finish baking at 350-F for 30 minutes. Source: Pennsylvania Dutch

The History of Recipes
Transcribed cooking instructions as a concept can be found way back into antiquity, in truth as far as ancient Egypt, and possibly even further than that. However, these, ancient records were just very simple pictorial, hieroglyphic or cunieform instructions for preparing food.
Progressing into The time of the roman empire around 25BC a roman called Apicius compiled a number of documents which described recipes prepared by wealthy roman citizens. In his works, Apicius tells us how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and afters, a style of dining still practiced today. Aspicius also recounts how the cooks of Roman times made use of a good variety of spices and herbs, including a few that will be familiar to modern chefs like basil, rue and parsley. Over the following few centuries, the rich and powerful families of Wesstern Europe tried to lay on the most exotic meals, and consequentially cooks and their recipes were highly sought after. Nevertheless, it wasn`t until the 19th century that formal cookery and recipe collections became popular. Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated the best years of their lives to collecting, testing, and publishing recipes that were common in the better off homes of the day. The arrival of TV brings us celebrity chefs and the recipe books that accompanied them. Which brings us neatly to the present day and the internet revolution, allowing everybody to search through massive numbers of recipes such as those found on this site. |
