The History of Recipes
It is quite possible to track the history of written cooking instructions way back into distant history, certainly as far as the Egyptians, and maybe even further. However, mostly, these early recipes were just simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
Interestingly, the oldest recipe discovered, according to experts are some tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful and blissful. Progressing into The time of the romans around 25BC a roman called Apicius compiled a collection of documents detailing recipes prepared by wealthy Romans. In his works, Apicius recounts how the meals of wealthy Romans were divided into hors d`oeuvres, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also recounts how the cooks of his times made use of many different spices, including some familiar names such as bay, mint and parsley. Moving on, there were a couple of cookery books from the 1300s ; a recipe book titled `Forme of Cury`, and another titled `Curye on Inglish`. Amusingly, these books are nothing to do with the curry that is served today, but rather descriptions of the types of food served to the rich people of the time. Later, in the 15th century, knights returning from the crusades brought back a variety of foods, spices and herbs from the holy lands, including spices such as rosemary and coriander. These new herbs and spices created a surge in publications on food, the majority of which still exist in private collections. During the next few hundred years, the upper-class families of the West competed to lay on the best banquets, and consequentially chefs and their recipe collections became highly prized. Even so, it wasn`t until the 1800s that formal cookery and cookery books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated the best years of their lives to assembling, testing, and writing down popular recipes of the day. By the time we get to the twentieth century, cookery publications were highly popular due to better eduction, leisure time and disposable income. Like it or not, the introduction of TV brings us TV cooks and the spin-off recipe books. And that neatly brings us to the present day and the internet revolution, allowing everyone to search through massive numbers of recipes like those on this recipe site. |
