The History of Recipes
We are able to read the history of meal recipes back into distant history, at least as far back into recorded history as ancient Egypt, and maybe even further. However, in the main part, these early recipes were just primitive hieroglyphic recipes for meal preparation.
The truth of the matter is, the oldest recipe discovered so far, according to historians is a series of tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel blissful and exhilarated. As we move into The time of the romans around 25BC a man called Apicius compiled a number of scripts describing recipes prepared by his fellow Romans. He describes how the meals of wealthy Romans were separated into starters, main meal and desserts, something we still use today. Aspicius also describes how the Roman cooks were skilled in the use of many herbs, including a few you will know such as bay, rue and dill. As we move on, there are a couple of interesting books which appeared in the 1300s : one book called `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Surprisingly, they are unconnected to the indian curry that is familiar to us all today, but instead recipes for the types of food on the menues of the nobility of the time. Later, in the fifteenth century, knights returning from the crusades brought us many foods and herbs from middle-east cuisine, including spices such as coriander, parsley, basil and rosemary. These new herbs and spices was responsible for an eruption in books on cooking, many of which are kept safe in private libraries. By the advent of the 20th century, recipe publications are in great demand, mostly as a result of higher levels of literacy, increased leisure time and having more money. |
