The History of Recipes
Transcribed cooking instructions as an idea can be tracked far back into antiquity, in truth as far back into recorded history as ancient Egypt, and maybe further still. Having said that, these, ancient cook books were just very basic hieroglyphic instructions for meal preparation.
As we move into The time of the roman empire around 25BC a roman called Apicius wrote some documents which described recipes enjoyed by wealthy Romans. In his publication, Apicius tells us how the roman meals were split into starters, entrees and desserts, a style of dining still practiced today. Aspicius also tells us how the Roman chefs were skilled in the use of a wide range of herbs and spices, including a few that will be familiar to modern chefs like thyme, rue and parsley. Over the following few centuries, the powerful and wealthy houses tried to serve the most exotic meals, and because of this the best cooks and their recipe collections were at a premium. Notwithstanding that, it was during the 1800s that cookery and recipe collections really came of age. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to assembling, verifying, and publishing recipes that were common in the better off homes of the day. The arrival of TV gave us celebrity chefs and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of computers and the internet, allowing us all to access massive numbers of recipes just like those on our web site. |
