The History of Recipes
Transcribed cooking instructions as an idea can be traced far back into the distant past, at least as far back as the early Egyptians, and potentially, even further back. Interesting though that is, in the main part, these early cookbooks were just simple pictorial, hieroglyphic or cunieform recipes for food preparation.
In an interesting twist, the oldest recipe found, according to food historians are a few tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated. During the time of the Romans a roman called Apicius created a few documents detailing recipes cooked by wealthy Romans. In his scrolls, he recounts how the meals were divided into appetizers, entrees and afters, a style of dining still practiced today. Aspicius also informs us how the ancient cooks were skilled in the use of a wide range of herbs and spices, including a few that are still present in modern kitchens like thyme, rue and parsley. Moving our culinary historical trip onwards, we find two recipe books dating from the fourteenth century : a book published under the title `Forme of Cury`, and another named `Curye on Inglish`. The titles are somewhat misleading tho`, these two books are nothing to do with the curry that is popular today, but instead accounts of the types of meals on the tables of the rich and wealthy people of that time. In the 15th century, people returning from the crusades brought us many foods, spices and herbs from the Middle-East, including spices like basil and rosemary. These new foods and tastes led to an outbreak in manuscripts on cooking, many of which are now in private libraries. When we get to the 1900s, cookbooks were in great demand, due to increased literacy, people having increased leisure time and having more money to spend. The arrival of TV gave us TV cookery programs and the spin-off recipe books. Which pretty much brings us to the present day and the invention of the internet, allowing us all to access thousands of recipes just like those on our web site. |
