The History of Recipes
Written cooking instructions as a concept can be found back into history, in fact as far into history as the early Egyptians, and maybe further still. Having said that, these, old cook books were just basic hieroglyphic or cunieform recipes for meal preparation.
Fascinatingly, the most ancient recipe discovered, according to academics is a series of stone tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated. Progressing into The time of the roman empire around 25BC a man called Apicius compiled a few scripts showing how to cook the recipes cooked by wealthy Romans. In his works, Apicius tells us how the meals of wealthy Romans were split into hors d`oeuvre, main meal and desserts, a style of dining still practiced today. Aspicius also informs us how the cooks of his times were skilled in the use of a wide range of spices and herbs, including a few that will be familiar to modern chefs such as bay, fennel and parsley. In the 15th century, knights returning from the crusades brought us a variety of foods, spices and herbs from the holy lands, including parsley and basil. These new culinary innovations prompted an eruption in recipe books, many of which still exist in academic collections. The arrival of TV brought us TV chefs and the spin-off recipe books. Which pretty much brings us to the present day and the invention of the internet, allowing everyone to access massive numbers of recipes just like those on this recipe site. |
