The History of Recipes
We are able to trace the history of written recipes far back into the far past, in truth as far into history as the early Egyptians, and potentially, even further back. Having said that, generally, these old records were just basic hieroglyphic or cunieform recipes for food preparation.
The truth of the matter is, the most ancient recipe discovered so far, according to experts in ancient history are a few stone tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful and exhilarated. As we move into Roman times 25BC a roman called Apicius created some documents which described recipes cooked by wealthy roman citizens. In his works, he tells us how the roman meals were separated into hors d`oeuvre, main course and dessert, something we still use today. This early Roman chef tells us how the early Romans made use of a wide range of aromatic flavors, including some that we all recognise for example bay, mint and parsley. Later, in the fifteenth century, people returning from the crusades brought back many new spices and herbs from Arab cuisine, including spices like coriander, parsley, and rosemary. These new foods and spices prompted a torrent in recipe publications, most of which are kept safe in academic collections. During the next few centuries, the powerful and rich tried to offer the most exotic banquets, and because of this the best chefs and their recipes increased in prestige. Nevertheless, it wasn`t until the nineteenth century that haute cuisine and recipe books reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated years of their lives to assembling, trying out, and writing down the recipes of their peers. The revolution that is television gave us celebrity TV chefs and the accompanying recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting everybody to search through massive numbers of recipes just like those on sites such as this. |
