The History of Recipes
Written recipes as a concept can be tracked back into the distant past, in truth as far back into history as early Egypt, and maybe further still. However, generally, these ancient cookbooks were just simple hieroglyphic instructions for meal preparation.
Fascinatingly, the most ancient recipe discovered so far, according to experts in ancient history is a collection of ancient tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated. Progressing into The time of the roman empire around 25BC a man called Apicius assembled a number of scripts which described recipes enjoyed by the Romans. In his publication, he recounts how the meals were divided into hors d`oeuvres, main meal and desserts, a very modern way of dining. This early Roman chef recounts how the Romans were skilled in the use of a wide range of aromatic flavors, including some that we all recognise for example basil, rue and asafoetida. In the 15th century, the Crusaders brought back many new foods and herbs from Arab cuisine, including coriander, parsley, and rosemary. These new foods and spices caused an eruption in books on cooking, the majority of which are now in private cookery archives. Over the following few centuries, the powerful families of Wesstern Europe tried to serve up the most exotic meals, and because of this the best cooks and their recipes increased in prestige. Nevertheless, it wasn`t until the 19th century that fine cooking and cookery books became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to assembling, trying out, and writing down recipes of the day. By the time we get to the 20th century, cooking books were in high demand, due to increased literacy, more free time and having more money to spend. |
