The History of Recipes
It is possible to trace the history of written recipes back into history, at least as far back as the early Egyptians, and maybe further still. Interesting though that is, sadly, these old cookbooks were just basic hieroglyphic instructions for preparing meals.
Later on, in The time of the roman empire around 25BC a man called Apicius compiled a few documents detailing recipes enjoyed by his fellow Romans. In his works, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he informs us how the ancient chefs were skilled in the use of a wide range of herbs, including a few that will be familiar to modern cooks such as basil, fennel and asafoetida. Later, in the fifteenth century, the Crusaders brought back a variety of foods, spices and herbs from middle-east cuisine, including coriander, basil and rosemary. These new foods and tastes prompted an eruption in manuscripts on cookery, some of which are now in private collections. The arrival of television brought us TV cooks and the accompanying recipe books. Which pretty much brings us up to date and the invention of the internet, permitting us all to access massive numbers of recipes just like those on this web site. |
