The History of Recipes
Written cooking instructions as an idea can be traced way back into distant history, at least as far into history as the Egypt of the Pharoahs, and maybe even further. Interesting though that is, these, ancient cookbooks were just very basic hieroglyphic or cunieform instructions for food preparation.
In an interesting twist, the oldest recipe found, according to food historians are some clay tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated. Moving our culinary historical trip onwards, there were some recipe books published in the 1300s - a cookery book titled `Forme of Cury`, and another called `Curye on Inglish`. Despite their titles, these two books are not about the indian food that is popular today, but rather accounts of the types of food enjoyed by the rich and wealthy people of that period. Over the next few hundred years, the upper-class families of Wesstern Europe competed to offer the most extravagent banquests, and as a result chefs and their recipes could command a high salary. However, it was during the nineteenth century that fine cookery and recipe collections became really popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated the best years of their lives to collecting, verifying, and writing down recipes that were common in the better off homes of the day. When we get to the 1900s, cookery publications were in great demand, as a result of increased literacy, leisure time and having more money to spend. |
