The History of Recipes
Written recipes as an idea can be traced far back into antiquity, at least as far back into history as the Egypt of the Pharoahs, and maybe further still. Having said that, these, ancient cookbooks were just primitive hieroglyphic or cunieform instructions for meal preparation.
In an interesting twist, the oldest recipe discovered, according to Professor Solomon Katz, is a collection of ancient tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `blissful`. Later on, in The time of the romans 25BC a roman called Apicius wrote some scripts describing recipes prepared by wealthy roman citizens. In his publication, Apicius tells us how the roman meals were split into hors d`oeuvre, main course and dessert, something we still use today. He also tells us how the chefs of Roman times made use of many different spices, including a few that are still present in modern kitchens for example basil, rue and asafoetida. Later on, in the 15th century, people returning from the crusades brought back many foods and spices from the holy land, including coriander, parsley, basil and rosemary. These new culinary innovations prompted a torrent in recipe publications, many of which are now in private cookery archives. Over the succeeding few centuries, the powerful and wealthy houses competed with each other to offer the most extravagent banquests, and consequentially the best cooks and their collection of recipes were highly sought after. Notwithstanding that, it wasn`t until the nineteenth century that haute cuisine and recipe collections rose to prominence. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, testing, and recording the recipes of their peers. The TV revolution gave us TV cookery programs and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing everyone to search through massive numbers of recipes like those on this recipe site. |
