The History of Recipes
Written recipes as a concept can be tracked far back into history, at least as far back as pharonic Egypt, and possibly even further than that. Having said that, generally, these ancient recipes were just primitive pictorial instructions for meal preparation.
In fact, the most ancient recipe discovered, according to historians are a few tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful. Progressing into Roman times around 25BC a roman called Apicius created some scripts which described recipes enjoyed by his fellow Romans. He recounts how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and afters, something that is very familiar to us today. This early Roman chef recounts how the ancient chefs were skilled in the use of a good variety of spices, including a few that will be familiar to modern cooks for example bay, fennel and dill. Later on, we find two interesting recipe books which were published in the 14th Century ; one book published under the title `Forme of Cury`, and another, similary titled `Curye on Inglish`. The titles are somewhat misleading tho`, these have no connection with the curry that appears on menues today, but instead accounts of the types of meals eaten by the rich and wealthy people of the time. Later on in the 1400s, people returning from the crusades brought back many new foods and herbs from the holy land, such as basil and coriander. These new foods and tastes caused an outbreak in manuscripts on cooking, some of which are kept safe in private cookery archives. By the advent of the twentieth century, cookbooks are increasing in popularity mostly as a result of better eduction, people having more free time and having more money. The introduction of the TV gave us celebrity chefs and the demand for the accompanying recipe books. Which brings us neatly up to date and the internet revolution, permitting us all to access massive numbers of recipes such as those found on this web site. |
