The History of Recipes
We are able to read the history of written recipes way back into the distant past, in fact as far back as pharonic Egypt, and maybe further still. Interesting though that maybe, these, old records were just simple hieroglyphic recipes for meal preparation.
As we move into The time of the romans around 25BC a man called Apicius assembled a collection of scripts showing how to cook the recipes cooked by wealthy roman citizens. In his works, Apicius tells us how the roman meals were separated into starters, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef tells us how the early Romans used many herbs and spices, including a few that will be familiar to modern chefs like basil, fennel and parsley. Later, in the fifteenth century, the Crusaders brought back a variety of foods and spices from the holy lands, including coriander, parsley, and rosemary. The introduction of these new herbs and spices was responsible for an outbreak in recipe publications, the majority of which are now in private collections. By the advent of the 20th century, recipe books are greatly in demand as a result of better eduction, people having more leisure time and having more money. |
