The History of Recipes
Historians have proved the existance of recipes far back into history, at least as far as early Egypt, and potentially, even further back. In practice though, sadly, these early recipes were just simple pictorial recipes for food preparation.
As we move into The time of the romans around 25BC a man called Apicius created some scripts showing how to cook the recipes enjoyed by wealthy roman citizens. In his scrolls, Apicius describes how the roman meals were separated into hors d`oeuvres, main course and dessert, a style of dining still practiced today. This early Roman chef recounts how the ancient cooks made use of many different spices, including many that are still in use today like basil, mint and parsley. During the next few centuries, the upper-class families of Europe strove to serve the best banquets, and as a result chefs and their collection of recipes increased in prestige. Even so, it wasn`t until the nineteenth century that haute cuisine and recipe collections reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated years of their lives to assembling, testing, and recording recipes to allow everyone to enjoy them. By the advent of the 20th century, cooking publications were greatly in demand due to increased literacy, leisure time and a general increase in wealth. |
