The History of Recipes
Written cooking instructions as a concept can be found far back into distant history, at least as far as ancient Egypt, and maybe further still. However, sadly, these ancient cook books were just very basic pictorial, hieroglyphic or cunieform recipes for preparing food.
Fascinatingly, the oldest recipe discovered, according to academics is a collection of clay tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `blissful`. Progressing into The time of the roman empire around 25BC a roman called Apicius wrote a collection of documents describing recipes enjoyed by the Romans. In his works, Apicius describes how the meals were divided into hors d`oeuvres, main course and dessert, something that is very familiar to us today. Additionally, he recounts how the Roman cooks used a wide range of herbs and spices, including many that are still in use today like bay, rue and parsley. In the 15th century, people returning from the crusades brought back many foods and herbs from the holy lands, including basil and coriander. These new herbs and spices caused an increase in publications on food, some of which are now in private cookery archives. Over the following few centuries, the powerful and wealthy competed with each other to serve the most exotic meals, and consequentially the best cooks and their recipe collections were at a premium. Nevertheless, it wasn`t until the nineteenth century that fine cookery and recipe publications rose to prominence. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated their lives to assembling, verifying, and recording recipes to allow everyone to enjoy them. When we get to the 1900s, cookbooks are in high demand, mostly as a result of better eduction, people having more leisure time and having more disposable income. |
