The History of Recipes
Transcribed cooking instructions as an idea can be observed way back into ancient history, in truth as far as pharonic Egypt, and quite possibly further than that. However, these, early recipes were just very simple pictorial, hieroglyphic or cunieform recipes for preparing meals.
Fascinatingly, the most ancient recipe in existence, according to experts are a few stone tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `blissful`. As we move into The time of the roman empire around 25BC a man called Apicius created a collection of scripts which described recipes prepared by wealthy Romans. In his works, Apicius tells us how the meals were separated into starters, entrees and desserts, a style of dining still practiced today. Aspicius informs us how the Romans used a wide range of herbs, including some that we all recognise for example bay, fennel and dill. Over the following few centuries, the rich families of Europe tried to lay on the most extravagent banquests, and as a consequence, the best chefs and their recipes became highly prized. Nevertheless, it was during the 1800s the formal cooking and recipe collections became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated their lives to assembling, verifying, and writing down recipes common in their social group. When we get to the 1900s, cooking publications are increasing in popularity as a result of more people being able to read, people having increased free time and disposable income. The arrival of TV brought us celebrity chefs and the demand for the spin-off recipe books. And that brings us to the present day and the invention of the internet, permitting everybody to search through thousands of recipes just like those on this web site. |
