The History of Recipes
Written recipes as a concept can be observed back into the far past, at least as far into history as the ancient Egyptians, and quite possibly further than that. Interesting though that maybe, these, old recipes were just very basic pictorial recipes for food preparation.
Interestingly, the most ancient recipe found, according to historians is a series of tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful and exhilarated. During Roman times 25BC a roman called Apicius compiled a collection of documents which described recipes enjoyed by his fellow Romans. In his works, Apicius recounts how the roman meals were separated into appetizers, main course and desserts, something that is very familiar to us today. Aspicius also recounts how the cooks of Roman times were skilled in the use of many herbs, including a few that are still present in modern kitchens for example basil, fennel and asafoetida. During the succeeding few centuries, the upper-class families of the West tried to serve up the most extravagent meals, and as a result the best cooks and their recipe collections were greatly in demand. Even so, it was during the nineteenth century that cookery and recipe publications reached a high level of popularity. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, devoted much of their lives to collecting, verifying, and recording recipes of the day. Like it or not, the introduction of TV brings us celebrity chefs and the demand for the accompanying recipe books. Which pretty much brings us to the present day and the internet revolution, allowing everybody to access massive numbers of recipes like the ones you can find on the site you are now reading. |
