The History of Recipes
Academics have found proof that recipes existed way back into distant history, in truth as far as the Egypt of the Pharoahs, and maybe even further. Interesting though that is, in the main part, these old recipes were just simple hieroglyphic or cunieform recipes for preparing meals.
In fact, the oldest recipe in existence, according to Professor Solomon Katz, are some ancient tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `blissful`. Progressing into The time of the roman empire 25BC a roman called Apicius wrote some documents detailing recipes enjoyed by his fellow Romans. In his works, he describes how the meals of wealthy Romans were divided into hors d`oeuvre, main course and dessert, a style of dining still practiced today. Aspicius describes how the Roman chefs were skilled in the use of a good variety of aromatic flavors, including some familiar names like basil, rue and parsley. Later on in the 1400s, people returning from the crusades brought back a variety of foods and spices from Arab countries, including spices such as coriander, parsley, and basil. These new foods and tastes prompted a torrent in recipe publications, many of which still exist in private cookery archives. For the centuries that followed, the powerful and wealthy houses competed to serve up the most extravagent meals, and as a consequence, chefs and their recipes were greatly in demand. However, it wasn`t until the nineteenth century that haute cuisine and recipe collections became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, spent years to collecting, trying out, and writing down recipes that were common in the better off homes of the day. The introduction of the TV gave us TV cooks and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing us all to access thousands of recipes such as those found on sites such as this. |
