The History of Recipes
Written cooking instructions as a concept can be tracked way back into antiquity, at least as far back as ancient Egypt, and quite possibly further than that. Interesting though that maybe, in the main part, these ancient cook books were just basic pictorial instructions for meal preparation.
In fact, the oldest recipe in existence, according to academics are some clay tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `exhilarated, wonderful and blissful`. Progressing into Roman times around 25BC a man called Apicius assembled a few documents describing recipes enjoyed by the Romans. In his works, Apicius tells us how the meals were separated into starters, entrees and dessert, something that is very familiar to us today. Aspicius also recounts how the Roman chefs used many herbs, including some familiar names like basil, fennel and parsley. Later on in the 1400s, the Crusaders brought back many foods, spices and herbs from Arab countries, including spices such as parsley and basil. The introduction of these new foods and spices was responsible for an outbreak in publications on food, some of which are now in academic collections. For the next few years, the powerful families of the West competed with each other to serve the most exotic banquets, and as a consequence, chefs and their recipe collections were at a premium. Nevertheless, it was during the 1800s that fine cookery and recipe publications became really popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted their lives to collecting, verifying, and writing down recipes to allow everyone to enjoy them. By the advent of the twentieth century, recipe books are in high demand, due to more people being able to read, leisure time and having more disposable income. |
