The History of Recipes
Written recipes as an idea can be observed far back into history, in truth as far back as the early Egyptians, and potentially, even further back. Having said that, these, ancient recipes were just simple hieroglyphic recipes for preparing food.
In an interesting twist, the most ancient recipe in existence, according to historians is a series of clay tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `wonderful`. Much later, in Roman times a roman called Apicius wrote a number of documents which described recipes cooked by wealthy roman citizens. In his scrolls, he tells us how the roman meals were divided into starters, main meal and desserts, a style of dining still practiced today. This early Roman chef tells us how the Romans were skilled in the use of a good variety of aromatic flavours, including some familiar names for example basil, mint and parsley. Continuing our culinary historical journey, we find two interesting recipe books dating from the fourteenth century ; one book called `Forme of Cury`, and another called `Curye on Inglish`. Don`t be fooled by the titles though, they have no connection with the spicy food that is popular today, but rather recipes for the types of meals prepared by the chefs of the nobility of the period. Later on, in the 15th century, people returning from the crusades brought back many new spices and herbs from Arab countries, including spices like rosemary and coriander. These new spices and herbs caused an eruption in manuscripts on cookery, some of which still exist in academic collections. By the advent of the 20th century, recipe books are starting to become popular mostly as a result of more people being able to read, more free time and a general increase in wealth. |
