The History of Recipes
It is quite feasible to follow the history of written cooking instructions back into history, in truth as far into history as the ancient Egyptians, and potentially, even further back. Having said that, mostly, these old cook books were just basic pictorial instructions for food preparation.
In fact, the oldest recipe found, according to food historians is a series of tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `blissful`. Later on, in The time of the romans around 25BC a roman called Apicius created a collection of scripts detailing recipes enjoyed by the Romans. In his works, Apicius describes how the meals were divided into appetizers, main meal and afters, a style of dining still practiced today. This early Roman chef recounts how the cooks of his times used many different herbs, including some familiar names such as basil, fennel and asafoetida. Later, there were a couple of recipe books from the 14th Century ; a cookery book called `Forme of Cury`, and another named `Curye on Inglish`. Surprisingly, these two books are unconnected to the curry that is popular today, but instead descriptions of the types of meals served to the rich and powerful of that period. Later on in the 1400s, people returning from the crusades brought us a variety of foods, spices and herbs from the Middle-East, such as basil and coriander. These new herbs and spices led to an eruption in manuscripts on cooking, many of which are now in private collections. For the decades that followed, the upper classes competed to serve up the best banquets, and as a result cooks and their recipe collections were at a premium. Nevertheless, it was during the 19th century that cooking and recipe collections became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to collating, verifying, and writing down popular recipes of the day. By the time we get to the 20th century, cookery books are highly popular due to increased literacy, people having more free time and having more money to spend. The arrival of television gave us TV cooks and the spin-off recipe books. Which brings us neatly up to date and the internet revolution, allowing everyone to search through thousands of recipes like those on the site you are now reading. |
