The History of Recipes
It is quite possible to trace the history of recipes far back into history, at least as far back as ancient Egypt, and potentially, even further back. In practice though, in the main part, these ancient records were just basic hieroglyphic or cunieform instructions for preparing meals.
Interestingly, the oldest recipe discovered so far, according to academics are a few clay tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `wonderful`. During Roman times 25BC a roman called Apicius wrote a number of scripts detailing recipes cooked by wealthy roman citizens. He describes how the meals of wealthy Romans were split into appetizers, main meal and dessert, something that is very familiar to us today. Aspicius recounts how the cooks of Roman times were skilled in the use of many different spices, including some that we all recognise for example thyme, rue and asafoetida. During the succeeding few centuries, the powerful and rich houses competed to offer the most exotic meals, and because of this the best chefs and their collection of recipes were at a premium. Notwithstanding that, it was during the 19th century that formal cookery and recipe publications really came of age. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, spent years to collating, testing, and writing down recipes of the day. By the arrival of the 1900s, cook books were in great demand, mostly as a result of higher levels of literacy, people having increased spare time and having more disposable income. Like it or not, the introduction of television gave us TV cookery programs and the recipe books that accompanied them. And that brings us to the present day and the internet revolution, allowing everybody to access thousands of recipes like those on this recipe site. |
