The History of Recipes
Written recipes as a concept can be tracked way back into antiquity, at least as far back as the early Egyptians, and maybe further still. However, these, old records were just primitive hieroglyphic or cunieform instructions for preparing food.
Fascinatingly, the oldest recipe discovered, according to historians are some clay tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful and blissful. Progressing into The time of the roman empire around 25BC a roman called Apicius compiled a number of documents detailing recipes cooked by wealthy roman citizens. In his works, he recounts how the meals of wealthy Romans were split into starters, main meal and desserts, something we still use today. He also recounts how the Roman chefs made use of many aromatic flavors, including a few that are still present in modern kitchens for example thyme, mint and asafoetida. As our culinary historical trip moves to more modern times there were two recipe books dating from the 14th Century - one book titled `Forme of Cury`, and another called `Curye on Inglish`. Perhaps surprisingly, they are unconnected to the indian curry that is familiar to us all today, but instead recipes for the types of food cooked for the wealthy. Later on, in the 15th century, the Crusaders brought back many foods, spices and herbs from the East, including spices such as basil and coriander. These new foods and tastes was responsible for a surge in recipe publications, some of which still exist in academic collections. The arrival of TV brought us cooking programs and the spin-off recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting us all to access thousands of recipes just like those on our web site. |
