The History of Recipes
Written cooking instructions as a concept can be found way back into history, certainly as far as early Egypt, and quite possibly further than that. Interesting though that maybe, generally, these early cook books were just basic pictorial recipes for meal preparation.
In fact, the oldest recipe discovered so far, according to experts are some clay tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel wonderful and blissful. Later on, in Roman times around 25BC a roman called Apicius created some scripts describing recipes prepared by wealthy roman citizens. In his publication, he tells us how the roman meals were separated into hors d`oeuvre, entrees and afters, something that is very familiar to us today. This early Roman chef tells us how the Roman chefs used many different spices, including a few that will be familiar to modern chefs such as bay, rue and asafoetida. Later on, we find some recipe books which were published in the 1300s - a recipe book titled `Forme of Cury`, and another, similary titled `Curye on Inglish`. Despite their titles, these are nothing to do with the spicy food that appears on menues today, but rather recipes for the types of meals prepared for the nobility of those days. Later on in the 1400s, people returning from the crusades brought back many foods and herbs from middle-east cuisine, including spices such as coriander, parsley, and rosemary. The introduction of these new culinary ideas caused a surge in cookery books, some of which are now in private libraries. The introduction of the TV gave us TV cookery programs and the demand for the accompanying recipe books. Which brings us neatly up to date and the invention of computers and the internet, allowing us all to access thousands of recipes like those on this web site. |
